William Of Ockham is a very special, taproom-only small batch cuvée blended from four carefully selected oak barrels. We’re putting the spotlight on our most delicious barrels blended with no additional flavorings; we chose these barrels because they display the sensory complexity that can only result from extended mixed culture fermentation in French oak and blending at the peak of ripeness: layered acids, complex fruity esters of pineapple and peach, subtle brettanomyces leather, and oak-derived qualities of vanilla and tannin. It is named for the medieval philosopher who formulated the principle known as Occam’s Razor: “when solving a problem, the simpler solution is more likely to be correct than the complex one.”
