No Hands Now, our latest mixed fermentation gose, was developed with Michelada on the mind. Packed with chipotle chiles, lime, and sea salt, this small-batch beer is radiating smoky and complex chile aroma with a hint of cedar wood and the brightness of a fresh-squeezed lime. The body is super light and incredibly refreshing — a savory treat that delivers all the deep flavors of the chile without too much heat.

Pours a light fizzy head with almost no retention, no lacing, hazy cloudy reddish-orange color
Nose is quite interesting, a lot like a Mezcal, smoky ancho chilis up front, pretty smoky overall, then fruity with citrus, juicy key lime, pomelo maybe, a bit of tart funk and yogurt lacto, maybe even a little oak
Taste starts a bit sour, tart funk with some creamy tart lacto yogurt notes, more of the gose up front, then some chili pepper heat pops up but mild, a bit smoky but not a lot with the ancho chilis, into key lime and citrus, a hint of salt on the back end, definitely a Mezcal margarita thing going, tart flemmy finish with more pepper heat, smoky ancho chili notes, and hint of salt as well
Mouth is med bod, med to lighter carb, some pepper heat, fair acidity and flemmy finish
Overall I liked this a lot more than I expected, I was worried it would be some gimmick thing, but I get a nice gose base with good smoky ancho chilis as well as a bit of chili pepper heat, nice key lime and citrus, even the hint of salt (which should be there for the gose anyways), all blended nicely to a Mezcal margarita thing that is quite enjoyable

Pours a cloudy sunset orange, lively orange-white head quickly dissipates; small, champagne carbonation, no lacing. Nose is very sharp - lime juice, salt, brackish water, even pleasant umami notes - much in line with a michelada. Taste follows - tart, salty, and extremely inviting. Citrus and sour lead off, with the salt kicking in - perhaps a bit too much - mid palate. The salt lingers late, but a slow, warming chili heat comes through late to ward off the salinity a bit. Still, the salt is a little unbalanced for me. Mouthfeel is thin with only some cursory wisps of initial carb. Really like where they went with this, but found it a touch unbalanced on the salt end.

Very light, not strong in flavor, but has a hint of lime and salt. Would be good in a Michelada.

Tastes of chili and lime. Pours a rust color with an off white head. Tastes of chili, lime, and salt. Good lacing and head retention. I’d describe this beer as “interesting.”
