This west coast-style IPA is our first ever IPA brewed with 100% barley — no oats or wheat. With multiple boil additions of hops, a whirlpool hop burst, and two dry hop additions of Columbus, Simcoe, and Centennial, we’ve concocted an ale that shows off a refreshing bitterness laden with layers of delicious resinous classic hops. What makes this IPA contemporary, though, is our unique and inimitable house yeast strain — currently over 50 generations deep and adapting to its environment in our brewery — which imparts its characteristic esters of peach, mango, and white grape.

Pours a pale straw yellow with a finger of foamy head that slowly settles to a thin cap with plenty of lacing. Aroma of lemon and citrus. Taste follows nose.

Pours a dark, golden yellow, 1" fluffy head with mild retention but very good lacing. Nose is orange peel, pine, light resin; West Coast notes for sure, but on the moderate side. Taste follows - candied orange peel, resin, citrus pith, burnt brown sugar. Drinks far more bitter than the aroma, but stays crisp and very refreshing. Feel is on the light side of moderate and very crisp. Very good.

This looks great by looking ordinary. At room temperature, a pint can is cracked open and emptied into a clear glass liter mug. There's only a modest white head produced and it seems to be enduring. The color of the brew is lightly golden-amber, but dull and more opaque than translucent. The aroma is less attractive, just the standard malt, hops and yeast of most beers, without anything outstanding. The taste may have disappointed the eyes with an expectation of more barley malt. But, it's quite in line with the style. This is a West Coast IPA that, by virtue of its body and mouthfeel, doesn't need to cheat by abandoning barley malt as a counterbalance. Instead, it just bombards the taste buds with a multi-layered hop tastefest.
The barley malt likely makes this possible. It's not as sharply piney or dry as this category requires as a standard asset. But, it drinks richer and smoother than almost any other of its peers. As a West Coast IPA that remains true to what an IPA really is supposed to be, this is excellent. The glass lacing isn't bad, neither.

9/14/2021 can from the brewery in BK. Pours a translucent but not clear golden amber with. Finger of creamy white head, nice lacing, smell is citrusy caramel, candied grapefruit peel, pine resin, and orange cake, grapefruit donut, taste is dark bread malts, light molasses and caramel, big grapefruit character, pith and pine bitter finish, feel is medium bodied, dry carbonation. Malty, grapefruit, pine, bitterness, classic indeed.

16oz can purchased from the fridge as a 4-pack for $13.99. Canned on 9/14/21, so this is only 22 days old.
Look: Pours a nice nearly clear light amber color. There was a compact off-white head that dissipated pretty quickly. A bit of lacing.
Smell: The aroma is very old-school IPA - it's dank with candied orange rind, grapefruit zest, earthiness, an interesting banana/bubblegum aroma, along with a finish of green bell pepper.
Taste: It's deliciously refreshing, in the unique way that only a West Coast IPA can be. Up front, there's a bit of caramel malt along with some underlying tropical fruitiness (papaya, honeydew melon) and aggressive hops. The finish is bitter, yes, but not overpowering. The finish is tons of bitter orange and grapefruit rind, very dry with just a touch of apple sweetness. At 7.2% ABV, this tastes very drinkable to me.
Feel: The mouthfeel is nice - a bit slick/oily and chewy. It coats the palate nicely and the mouthfeel lingers on well after you have swallowed the beer. Carbonation is spot on.
Overall: This is my second Grimm beer. I continue to be impressed by these guys and I am excited that my local Whole Foods is currently carrying a couple of 4-packs. This beer is definitely a bit of a throwback. Kudos to Grimm for bringing this style back with old-school hops for a classic recipe. I probably would not care to drink more than one of these in a session, but it has successfully pulled me back to it as I have already drank two of the four cans in the past four days.

Pours a light yellow. Thick foam. Hoppy aroma. Definitely has that classic flavor. Big bitter hop body that fades to a little malt sweetness. Very good.

Malty, piney, resinous... with just enough bitterness. Makes me nostalgic for days past.
