Spontaneous fermentation ale w/ boysenberries, apricots, lemongrass & chamomile
To brew Wimmelbilder, we began with carefully selected spontaneous barrels, refermented on loads of boysenberries and apricots, and then conditioned the beer on chamomile and lemongrass. Each of these many elements is present in the aroma and flavor, and the delicate balancing act between the base beer, the fruits, and the spices is maintained throughout. Ridiculously complex and juicy!

Pours from the bottle an opaque dark purple, big frothy mauve head that gradually settles to a thick cap, no lacing. Nose is super interesting, a mix of good and...surprising. Sweet berry jam, vanilla, lemon peel, and big chamomile notes contribute to potpourri or hand soap smell. That said, the juicy berry notes overall make it an inviting beer. Taste is sour jam with some good sweetness to cut it, distinct pithy citrus bitterness, and a distinct lingering, floral, bitter (soapy?), finish. Mouthfeel is full without being heavy and help to carry the flavor throughout the whole drink. Overall, really complex with lots of plusses and few minuses, but love the chances that this beer takes.

Bottle from the brewery in Brooklyn. Pours a clear dark ruby red with a finger of pink rocky/foamy head that sticks around, nice lacing, smell is frutti di bosco hard candy, limoncello, sour blackberry jam, and dried apricot, hint of chamomile on the back end, taste is mildly tart blackberry and boysenberry jam, mildly tannic red grape juice, hints of apricot skin, candied lemon peel, chamomile on the finish that lingers, feel is medium bodied, well carbonated, mild acidity. A mixed berry ring pop and fruity chamomile tea vibes.
