The Open Work: Cab Franc is an exquisite showcase of our unique terroir. We began with whole clusters of Cabernet Franc grapes from Michelangelo Vineyard, in Cutchogue on Long Island’s North Fork. We used a carbonic maceration to release the grapes’ sweet juices, and allowed the wine to begin its fermentation spontaneously with no added yeasts or chemical interventions. We racked a special blend of one- and two-year aged spontaneous ale onto the grape clusters and allowed the coferment to meld in flavor. Brewed in November of 2021, we laid this gem down in the bottle for six months of maturation in glass. The result is a vinous ruby-colored sipper that marries the best elements of lambic and natural wine. With softly integrated acidity, leathery brett character, and vivid red fruit, this is a stunning example of what can be achieved with the spontaneous terroir of New York.

Pretty garnett red body with a magenta hint to it, beigey pinkish cap. Smell is very bretty and oaky with vinous grape supporting. Taste is bretty and bitter, is this a scratch beer with weird leafy/vine undertone? Not supposed to be. Grape is really nice is a sour and wild way, oak too, but too hard in brett direction. Sour and then way bretty, acid rounds out for the mouthfeel. If you have bottles sit on them for a while, drinking very young

Bottle for the brewery in Brooklyn as part of the 4th Anniversary. Pours a ruby red amber with a flash of pinkish head, minimal lacing; smell is sparking red wine, red wine jam, red grape juice, cherry hard candy, raspberry, frutti di bosco, funky hay; taste follows with juicy carbonated red wine, grape juice, cherry flesh, plum skin, tart and jammy strawberry and raspberry; feel is light and bright, dry, medium acidity. A juicy berry forward elixir.
