A: Golden, slightly turbid body with a half-finger of white head that doesn't last long. . . .
S: Modest tropical fruit. Some garlic or scallion. Touch of something sweeter - maybe candied orange peels.
T: Some tropical fruity hops - think ripe melon, especially on the aftertaste. Ripe peaches. That part of the peach that clings to the pit. Some piney bitterness is there, but it's mostly about the sweeter, fruity hops.
M: Interesting feel, which I like: fine, soft - but active - carbonation. Light-to-medium in heft. Real nice feel, makes it an easy drinker.
O: I like it. An easy drinker with nice flavors.

16oz can purchased from the fridge as a single for $4.99. Canned on 07/19/23, so this is exactly four weeks old as of when I drank it last night.
Look: It's a pretty-looking beer. It has a deep, bright orange color with a nice amount of haziness. It's not turbid or opaque though as it's letting the light through. There was about a finger and half of whitish head that dissipated to a thin layer.
Smell: It has nice aromas. "Cat pee" is predominant; while I'm really not sure what cat pee smells like, people say that Simcoe is it and whatever it is - it's present here. I get notes of peach rings, grape Dubble Bubble, orange Gatorgum, and honeydew. There's a bit of a floral/almost dank note along with lots of pine. Some green bell pepper on the finish.
Taste: This is pretty tasty. I am pleased that it is so easy to drink and very refreshing. Up front, it briefly shows some fruit notes of peach and honeydew along with some green notes. That greenness continues into the finish, which has a nice bitter bite yet it does not linger for very long. The finish is a bit woody, spicy, and ultimately quite dry. If I didn't know that I just drank I beer, I may have guessed that I was sucking on a peach pit in between my check and gums. It has a tinge of acidity, which I find kind of nice.
Feel: The mouthfeel is nice. It has a nice softness to it and it's nicely carbonated. Medium bodied.
Overall: Yeah, this is a tasty beer. I usually appreciate when a brewer makes a beer to showcase a single hop. Simcoe is a bit of a throwback, so this one is especially appreciated!

It should come as no surprise that Simcoe is one of our favorite hops, prized for its versatility as much as its complex aromatics. This IPA is an exploration of our hand-selected lot of Simcoe, with abundant notes of pine, berry, lavender, stone fruit and passionfruit. An astute observer will note that Simcoe the cat is hidden in the label, doing her favorite thing: laying in the rain garden outside of our brewery.
