Introducing Cloister, a malt-forward Belgian Dubbel for the incoming autumn weather! Pouring a luminous deep red with a rocky head of white foam, Cloister has an enticing nose of dried fruit and spice. The flavor rewards with notes of toasted bread, raisins, and caramel but finishes moderately dry. It seems that nobody except the Belgians makes a Dubbel anymore, but the malty richness of this beer style made it one of the first beers that Lauren and Joe Grimm fell in love with and learned to brew in their homebrewing days. Poured from a can into a tulip glass
Appearance – The beer pours a deep copper-brown color with a tiny fizzy head of foam. The head fades almost instantly, leaving a touch of lace on the sides of the glass.
Smell – The aroma is heavy of a lightly toasted bready smell mixed with aromas of dark fruits of cherry and raisin. Along with these aromas comes notes of brown bread and some smells of yeast along with a decent showing of candied sugar and molasses.
Taste – The taste begins with a somewhat malty brown bread and toasted malt flavor mixed with some sweeter brown sugar and candied sugar. Along with these tastes comes some yeast and a bit of spice with a little bit of coffee. As the taste advances the sweet gets more intense as flavors of raisin and plum join, while the roastiness gets lighter. A light char comes at the very end, leaving one with a malty, and moderately sweet dark fruit and bready Belgium malt taste to linger on the tongue.
Mouthfeel – The body of the brew is medium to thicker for a Belgium Dubbel with a lower carbonation level. Decent for the style, but a higher carbo would have been better.
Overall – A decent Dubbel. Worth a try at least.
