A unique project that drew inspiration from two 1930s books by Eduard Jalowetz on malting and brewing. Featuring an under modified pilsner malt from Valley Malt, and following the brewing schedule used at Pilsner Urquell a hundred years ago, Jalowetz tries to offer a peek into what malting, brewing, and enjoying beer was like in one of the beer capitals of the world at the turn of the 20th century.

A sturdy through-the-head pour released a fat finger of white soapy short-lived foam, spotty lacing, no cap, just a thin ring remains. Hazy yellow straw body.
Biscuit, wheat toast, and floral hops greets the nose; grain, grass and faint lemon follow.
Neutral taste at first with average hop flavor plus lemony citrus and above average bitterness from added spice. Cracker replaces biscuit, during the malty middle. With rising bitterness and now semi-dry, the finish is fast but not crisp. Spicy floral hops linger on.
Light bodied with below average carbonation, alcohol is very well hidden making this one so crushable. Matches style guidelines except for the haze, well differentiated from a Pilsner.

Pours a pale golden. Smells of honeysuckle. It smells lovely. Honeysuckle, medium crust bread, some spicy peppery hop character. This is quite a lovely pale lager. Kudos, Schilling!

Light honey colored body, clear; coarse, rapidly rising carbonation; nice head, white and sudsy, fairly dense, loses height relatively quickly; rough, spotty partial rings and fingers of foam mark each sip from the glass. Mild honey-like nose; gently sweet. Fine honey-like sweetness to the taste; crisp bitterness. Smooth and nearly glassy mouthfeel yet with a soft underlying coarseness for a bit of interest; good density for a low ABV beer.
A very tasty and well-balanced beer, full of flavor that should appeal to nearly all lovers of pale lagers.
