We brought back the first beer of our 100% Brettanomyces line, Les Grisettes. At under 4%, Les Grisette is a traditional style farmhouse ale brewed with Spelt, Buckwheat, Rye, and Oats, fermented on our house mixed culture of wild yeast. Grisettes were originally brewed for coal miners in the Hainaut region of Wallonia, Belgium. The name refers to the “gray” garments the women wore that delivered the beer to the miners. They were known as, “Les Grisettes.”

500ml bottle into a tulip. No dating, but this beer is likely between 5 & 10 years old.
Splendid looking beer. Hazy pale orange body small bubbly white head replenished by constant streams of carbonation. Aroma is mildly saison-like with an undercurrent of funk. On tasting all aspects are light. Dry, tart, sour, some apple notes, very faint funk and spice presence. Blends together beautifully. Finish is a slight drying leaving all tastes on the tongue. Very good drink.

Poured cold from a 1-litre bottle into a thick-stemmed straight-sided goblet. Big gusher upon pouring. Slightly cloudy, almost opalescent pale yellow in color, with over half a glass of sudsy white head. Complex aromas and flavors, with notes of lemongrass, damp straw, barnyard funk, white pepper, and white grape juice, with a hint of cider vinegar. Lightly tart and bitter, with a bit of astringency lingering on the finish. Good carbonation start to finish, with a medium-light body that makes this quite an easy-drinking table beer. Nothing to complain about with this one, highly recommended.

Undated bottle.
Pours a hazy orange yellow with healthy foam and lacing.
Loads of lemon zest on the nose, some funk, goodly amount of tartness.
Lemon, apricot, sour apples, some funk, tart but not sour.
Light body but not watery.
Very flavourful and enjoyable.

A: Poured into a Duvel tulip to a bright light yellow that's a little hazy topped by a dense two finger white head. This one took awhile to pour due to being a little heavy on carbonation out of the bottle. head retains well and leaves decent lacing
S: Smells of funky chalky yeast with some light lemony sourness along with some hints of peppery spice
T: Taste is lemony sourness up front with a pretty heavy hit from a band aid note along with a large amount of horseblanket. Slight peppery spice as well but tons of band aid on this one to the point of tasting like a throat soothing spray. The swallow on this one is slightly chalky yeast, some peppery spice and some lingering band aids.
M: This beer is fairly light in body and at times is approaching watery. Carbonation is prickly and effervescent which helps keep things moving along the palate. The beer has a fairly dry finish which isn't bad at all and is somewhat expected by the thorough attenuation.
O: Overall this is a pretty solid beer. The light sour notes are pretty nice while the yeast really drives the rest of the flavors to the beer. The band aid note is a little strong but other than that it's pretty well balanced. It's worth a try if you're into that sort of thing.

A white froth immediately erupts from the bottle. After a minute, this settles, allowing a murky pale straw beer to be poured. A big rocky white head lingers before leaving a thick coating of lace on an Offero glass.
Fresh lemons quickly fade to reveal earthy barnyard aromas. Musky caraway and straw follow with warmth.
While this is more bitter than I expect from a Saison, it calms to be fairly balanced with sweet tart citrus. Celery leads, followed by mild pepper, coriander and sourdough. The finish is long, mild and lazy.
A light body and silky texture are lifted by fine carbonation and a hint of alcohol. My bottle indicated 4.3%.
This is a great laid back beer which I enjoyed outside late afternoon in spring. It stands up to asiago cheese.

Pours a very cloudy hazy golden straw color. Thick frothy white head dissipates somewhat, but never completely. A thin layer of foam completely covering the beer remains.
Smell has notes of citrus, lemon zest, rind, and a nice funky brett aroma. Some spices and a nice yeasty note coming through. This is one of the best smelling brett saisons I've ever had.
Taste has a nice tropical citrus flavor - no doubt a combination of the hops and brett. Slight tartness with a strong barnyard funk throughout. Nice grainy backbone throughout with some spices and yeast. Initially there was a bit of a metallic aftertaste, but that died down as the beer warmed a bit.
Feel is light, crisp, vivacious and slightly tart. The carbonation is moderate but does provide that vivacious feel to the beer. Semi-dry finish coats the mouth.
I do not know how old this beer is - its not dated, but it seems likely that it does have some age on it. The beet in this is artfully done - one of the best brett saisons I have had.

This was poured into a tulip. The appearance was a soft burnt semi-hazy yellow color with some carbonation seen rising to blend into a one finger white foamy head. Soft white foamy and semi-bubbly lacing sticks and then slides into the beer. The smell takes on some lemon citrusy rind. Light mustiness comes in to balance with an effervescent crisp champagne-like yeast (not sure if a champagne yeast was used, but hey, to me, at least, it smells like one was used). The taste was crisp citrus sweetness with a light sweet grassy dryness clinging to my tastebuds. Light sour and bitter citrus rind and pulp combines to lay down in the aftertaste and slides into the finish. On the palate, this one sat about a light on the body with a nice sessionable feel to it. Carbonation runs fairly light feel to it. Overall, as a saison, I’d say this works. I’d have again.

Aromas of apple cider, slight berry tannins, fruit skins, light malts.
Flavor is much the same with slight champagne flavors and a bit of salt and lime. Much like fruity pebbles watered down and squirted with lime.
Nice feel on the palate, with buzzing carbonation.
Overall a very tame and easy wild ale with muted flavors.
