Our newest mixed fermentation saison! After primary fermentation with 2 strains of sacchromyces and lactobacillus, we inoculated Island Culture with three strains of brettanomyces. The resulting brew is tart, with a sweetness up front and a dry finish. It's immensely fruity with notes of pear, pineapple and a aged earthiness from 2 months in stainless.

On tap at Cellarmaker Brewing Company in San Francisco, CA.
Pours a hazy yellow with a foamy bone head that settles to wisps of film on top of the beer. No lacing on the drink down. Smell is slightly sour with grain, earth, funk, Brett, and acidic aromas. Taste is much the same with slightly sour grain, citrus fruit, tropical fruit, funk, Brett, earth, and acidic flavors on the finish. There is a mild amount of acidity on the palate with each sip. This beer has a good level of carbonation with a crisp mouthfeel. Overall, this is a pretty good beer with Brett qualities that come through slightly better in the taste.
