We brewed this international saison with brewmaster Graeme Mahy of Australian brewery Murray's. Graeme is actually a New Zealander so naturally we lightly hopped the beer with New Zealand Motueka, Nelson Sauvin and Riwaka. The malt bill is a simple blend of Belgian pale malt and German wheat. For the yeast we blended a French culture and a Belgian culture.

The resulting beer has the aromas of rustic baked bread dipped in honey, strawberry, cantaloupe, hay and pineapple. Our mixed yeast culture enhances the aroma with white pepper, more melon and a subdued green banana fruitiness. The flavor is biscuity and earthy with a nice minerality and spritzy carbonation to lighten the medium body.

This is a supremely quaffable brew which Graeme and Cellarmaker designed to showcase a balanced interaction of all the ingredients as well as avoiding the poor flavor combination of Nelson and phenolic yeasts. We think you will enjoy the final product.

my first saison type from these guys, served in a small glass at their taproom. its a neat beer, uniquely hoppy with the new zealand stuff, wheaty as can be, but unfortunately i think a little dominated by the french saison yeast in it. its the one element thats not really unique or special here, and its overdone in my opinion, i think it covers up the hops, adds a sharp white wine element to this that is a little too much, and even breaks down the structure of the wheat a little bit. if this was scaled back, or even removed entirely and the fermentation was left up to the belgian strain, i think this would be a vastly superior beer, even a little brett in there would pop it off too. not quite as dry as i like my saison to be. the hops smell and taste fantastic, nelson for sure. a great hop and these guys always use it well, its lost a little to the yeast in the taste, more of it would be awesome, but its delicious as it is in here. the wheat malt is really fresh and quite forward in the taste as well. a little milky in the feel, but i kind of dig that more rustic element. too much french yeast flavor and feel, but other than that this is another unique and delicious beer from cellarmaker. these guys are dialed in right now.
