Mixed-culture saison aged in used red wine puncheons. Collaboration with Automatic Brewing Co. and Highland Park Brewery.
This beer was partially open fermented in Highland Park’s plastic mashtun with saison yeast and cultures from Highland Park and Cellarmaker as well as oak spirals from Automatic. After 24 hours of ambient air exposure (in the brewery) the fermenting wort was pushed into a stainless conical to finish primary fermentation.
Once primary had completed the beer was pushed into 2 used red wine oak puncheons from our friends Oro En Paz Winery. The beer went through a lactic fermentation in the puncheons over six months and then was bottled in September.
Brainskillzzz pours a yellowish gold color with enticing pillowy head from high carbonation. Aromatics of lemon grass, hay, some citrus and tropical fruit as well as earthy Brettanomyces and European hops tickle the nose. The flavor is well balanced between semi dry graininess, a kiss of hops and a pleasant but not overwhelming lactic acidity. This is a quaffable but intriguing saison with great depth. We are very proud of it.
