Keen Observation is a golden sour beer aged in unrinsed Map of the Sun barrels. We started off by fermenting a clean golden with Saccharomyces in a stainless steel fermentor for about 2 weeks, then moved that clean beer into unrinsed Map of the Sun barrels and let it age there for months. All of the acidity and Brett characteristics you'll experience in Keen Observation are derived from the same microbes that fermented Map of the Sun.
Keen Observation is our second release in the Echo Series. It's part of the Echo Series because the flavors derived from the unrinsed barrels will echo those flavors that we enjoyed in Map of the Sun, the beer that was previously in those same barrels.

Bottle: Poured a pale dirty yellow color ale with a white foamy head with OK retention. Aroma of tart notes with some acidic notes also perceptible. Taste is a mix of sour and acidic notes with some overwhelming amount of acidity. Body is about average with good carbonation. Too much PH for my taste and somewhat one-dimensional.
