Belonging to an earlier time, Bygone is our journey back of an old world tradition. This tart saison blend is composed of 3 different oak barrels. Two barrels were solely fermented with DuPont saison yeast in primary and then underwent a secondary fermentation with Brettanomyces inoculations. One barrel was inoculated with Amalgamation, a Brett super blend, and the other with Brettanomyces bruxellensis. These two barrels were then blended with 1 oak barrel that was fermented with DuPont saison yeast, Brettanomyces anomala, and a belgian mixed culture. The result is a tart saison with a low acidity, with notes of pear, orange peel, pink peppercorn, and hay.

Sample at Mikkeller Beer Celebration Copenhagen 2018, Blue Session. Aroma is sweet and floral with pollen and meadow flower notes. Taste is balanced, a bit tart, yeasty, floral, quite easy drinking and dry.

A: Lightly cloudy golden straw color with a thin white head that slowly faded into a lasting bubbly collar.
S: Nose is peppery and slightly minerally/fruity over a crisp backbone.
T: Creamy, doughy, flavor that is surprisingly fruity dominate alongside peppery spice and a kiss of citrus juice complimented by hints if bitter citrus rind. Peppery spice, kumquat, light citrus, slight bell pepper, creamy yeast doughy, kiss of sugary, fruity, sweetness.
M: Medium-full body, splashy creamy carbonation, soft mouthfeel with a nice chew to it.
O: Fantastic. Has nice depth and roundness; not just crisp and one dimensional. Great multifaceted fruity character without having any fruit.
