We wanted to take a slight detour and travel a minor byway in our explorations of saison. Byway is a blend of tart saison aged in oak barrel and lightly dry-hopped with East Kent Golding. This base beer blend is composed of 3 different oak barrels. Two barrels were solely fermented with DuPont saison yeast in primary and then underwent a secondary fermentation with various Brettanomyces inoculations. One barrel was inoculated with Lochristi, a Brettanomyces blend, and the other barrel was inoculated with Dirty Dozen, a blend of 12 different Brett strains. These two oak barrels were then blended with a single oak barrel fermented with DuPont saison yeast, Brettanomyces bruxellensis var. Drei, and Lactobacillus bacteria. The light dry-hop adds a delicate floral aroma with notes of coriander to a base tart saison that showcases notes of citrus rind, grass, white grapes, and oak character.

Tulip at the brewery.
A: Served a deep golden with yellow highlights. A cap of off-white foam faded into a thin collar leaving wispy lace down the glass.
S: Sweet fruits up front with a spicy and grainy base followed by herbal, slightly grassy, and woody hints. Slight melon and maybe citrus as well.
T: Clean flavors of spicy and fruity saison base, with notes of stone fruit and sweet fruit nectar. Doughy yeast and stone fruit flavors in the finish, light grassy herbal flavor in the aftertaste. Subtle kumquat-type of ambiguous citrus flavor throughout.
M: Medium body, carbonation is soft but really froths up temporarily on my palate before smoothing away in the finish. Low acidity, complex yeast profile, smooth acidity. Drying finish but not an ultra dry beer. Drinks really well.
O: Complex and hard to describe flavor profile. Very delicious though with a lot going on. I seem to find something new each sip. TRB's yeast complexity is really increasing lately. One of the more complex yeast profiles I've had from the brewery. Delicious. Could drink all day.
