750 ml bottle, Cardinal Pub & Bar, Stavanger. ABV is 6.2%. Clear golden colour, moderate to low white head. Aroma of rooibos tea, pink peppercorns, rosehips, white wine, brettanomyces / farmhouse and oak. Slightly sweet and moderately sour flavour, with the same elements as the aroma. Very moderate hops.

another epic beer from these guys, in collaboration with a brewery in new zealand i have not heard of before, and then apparently blended with some girardin wort, giving it at least a thread of lambic as a foundation. this is much more sour than others i have had from these guys, the acidity is really high, almost takes over, perhaps its been developing in the bottle awhile now. its murky compared to some of their others too, foggy and sedimented and not overly lively, just a little less refined looking overall, but the flavor of this one is awesome. at first its medicinal and wild like lambic, the fermentation profile is very interesting, definitely funky, acidic, and truly different. some spontaneous agents in here for sure. notes of white grape, peach, and cut flowers emerge as it warms and as i settle into it, an aged hop element, and lots and lots of oak, tannic there, but super smooth at the same time, they got all of it here. there is a definite lambic character to this, which i really like, but there is some cool nuance too that takes it in a new direction, lemongrass, white pepper, and wet animal to finish. floral all the way, fresh at the same time that its very mature. these guys are killing it right now, and this is a wicked blend. well worth seeking out!

Hazy dark blonde with speckles. 4
Lemon zest, wood, cheese rind and white pepper. 4.25
Shortbread, vanilla from the oak, lemon tartness, touch of cider, orchard fruits, herbal hit and farmy end. 4.5
Half medium, dry, snappy. 4

Deep nose that hints at a sterling mix of oak, tartness, and saison yeast - chardonnay (barrel) character with specks of spice. Funk (from lambic addition) would up with age and make this even more interesting, but it’s bright and beautiful as is - starts like a saison, ends like a lambic. My only question is how much the adjuncts (rosehips, pink peppercorns, et al.) are actually bringing.

Yet to be disappointed by Burning Sky. 4.5
