i have been loving the wild stuff from these guys lately, which have seemingly been coming out fast and furious, or maybe i am just catching up on them kind of late, but this one is another brett fermented low alcohol fruited one, which they are doing a really nice job with. this one comes really pink out of the tap, the hibiscus having an obvious influence here, its almost neon. a little thicker than i would have expected, and not quite as lively on the carbonation either, but the color is gorgeous. the aroma is nice, a white winey tartness and some bretty funky thats subtle but quite mature. really sweet from the passion fruit though, and maybe a little perfumy from the hibiscus, neither of which are shy in the smell or the taste. passion fruit is more sweet than tart here, which makes me wonder if its some concentrate or something rather than whole fruit, but the flavor is spot on natural, and it does really work with the hibiscus, you just have to be in the mood for a lot of both. personally, i wish they were both a little more relaxed in here, as the nuance of the funky yeast is a little covered up, but its delicious and i wish it was more prominent here. its also a bit sweet, which i think moves it away from the drying tendencies of the yeast and blurs some of the woodiness here too. lastly, it needs more carbonation, especially with this much fruit, and in the end this seems a little less dialed in than some of their others, but i have seen bottles around and wonder if even a brief bottle conditioning would make this more lively. still really tasty stuff, glad to be seeing their stuff around town a lot more, they are finally getting the attention for their beer that they have deserved for a long time!
