-In duvel snifter. Brewed with Cherimoya and Elderflowers. 4th Ed. Titratable acidity = 950 mg/l.
A: Beautiful deep burgundy, almost merlot like, clear of any signs of effervesce. The head quickly dissipates as it normally does per style to a polished surface. There is no sign of lacing. Really like the deep reddish almost wine like tones of the coloring.
S: The nose was of sour berries and some musky floral scents. There is a small touch of alcohol, red wine like, with a fruitiness of apples, and red cherries. There is also some sweet candied fruity notes of a moderate strength. The flavor had a strong sourness, the tritratable acidity is a nice indicator I have never seen on this style of beer, I wonder if it will be used as a display marketing as IBU is with IPA's? There is some sour berry flavor, most notable strawberries, with some dry red wine accents. Deeply tart and tangy, some after thoughts of cough medicine like alcohol post-swallow.
M: Medium full body, nice fullness per style, very slick and slippery texture, slides off the tongue easily. Fullness of cough medicine consistency, with a small leave and presence of vinegar.
O: Overall this was my third tasting from this brewery, their sours are very respectable, drinkable and nicely brewed with a tart and tangy nature that is sure to please people of all spectrums. From the first sip it beholds your attention to the last. Strong drink-ability factor and will satisfy even the true hard-core fans of sours. Strong sour berry fruitiness, red wine like flair and some vinegar accents. I love the additions of the Cherimoya, which truthfully I was totally unfamiliar with before hand. But after some research it seems like a nature fit here, as well the soft and delicate balance of the elderflowers which reward the drinker with a new and different experience. The cherimoya and elderflowers make for a very good pairing here. cheers.

Taste: Moderate acetic sour tones, at the outset, with the cherimoya fruit complemented by the herbal elderberry flavors; underneath, there is a touch of biscuity sweetness; all the flavors coalesce in the finish
Mouthfeel: Medium body with low carbonation
Overall: Nicely balanced and pleasantly sour; definitely worth seeking out

A: pours a dark tinged copper body, frothy +1 finger off white foam head, spotty lacing, carbonation
S: soft cinnamon cookie aroma, floral, hints of herbal, sweet pollen
M: crisp and puckering semi dry finish
T: vinegar, herbal esters, hints of sweet floral notes, cracker
O: very good brew
