We wanted to take the opportunity to re-imagine our all Galaxy IPAs now that we have a fresh start in Rochester. This all-Galaxy beer takes what we've learned from making Space Dream and gives it an even more pared down malt base with some different hopping techniques.

A - Pours an ugly cloudy opaque peachy white. No purple any where. Some lacing. 2.75
S - Faint citrus, I would call it orange blossom. 4.0
T - Citrus and herbal hoppiness, not a hop bomb and not too bitter. 4.0
MF - Light bodied, smooth barely dry finish 4.0
O - Easy drinking. If a lower ABV it would be a session beer. 3.5

this is so dank, maybe even my favorite of all the other half beers i had in a pretty epic weekend of drinking their stuff. this is fresh from the rochester brewery, and really is a drinker, especially next to some of their more enormous ipa offerings, which always seem to hit me about mid can. this is absurdly pale in color, almost white looking, and really doesnt have very much conventional malt taste to it at all, almost has a raw wheat element, but then where does the alcohol come from? it must have some really pale barley or wheat malt at the very least, but this is really light in color and in grain taste. the hop profile is complex for being all galaxy, more than just the lime leaf, gin botanicals, and candied citrus i normally get from it, but also a strong white wine and mineral complexion, as well as honeydew and french melon, soft but bold at the same time, juicy and ripe, and here from the first sniff to the last sip in more or less equal intensity, pretty impressive. the feel is smooth but its not as creamy as some of the others are, less of the oats thing, at least overtly, and with a fastness a lot of them dont have, meaning its gone kind of quick in the finish, and the grain takes the hops with it, this is drier than the others, with a similarly nonexistent fermentation profile, just hops and some dry cereals. a nice expansive look at galaxy here, a killer hop on its own. these guys are killing it, and it seems like rochester is firing on all cylinders now!

L - 1-finger thick, bright white head atop a milky yellow body.
S - pineapple, grapefruit, tangerine. Oooh.
T - creamy tropical fruit. Pineapple first, then grapefruit, melon, lime. Earthy middle. Finishes somewhat bitter and slightly soapy. Moderate-low bitterness. Low sweetness. Low booziness.
F - medium body and carb.
O - not quite up to Space Diamonds level. I miss the heft, but this is still a winner.

Can: Poured a hazy/cloudy pale yellow color ale with a large white foamy head with good retention and some lacing. Aroma of dry floral undertones hops with some dry tropical notes and light citrus flavours. Taste is mostly dominated by dry hops with some citrus notes and light tropical notes with a dryer then expected finish. Body is full with good carbonation. Interesting IPA but not what I was exactly expecting from galaxy hops.
