Aged one year in Cognac barrels. We don’t do a lot cognac barrel aging but we threw this stout in barrels a year ago and it really wowed us. Enough for us to release the only 2 barrels we had of a straight, un-adjuncted.

Immediately following a pour of Triple Cream, we’re changing gears with a 5 oz pour of this 16% beast of a beer. Straight cognac barrel, no crazy adjuncts. I’m excited for this one so let’s just jump right in
Pours a still jet black with no head and leaves no lacing, but nice legs
Holy shit this is boozy on the nose, almost to a fault but it walks the line. I’m picking up on aromas of spicy bourbon, rich cognac, roasty malt, dark chocolate, honey, fusel alcohol, and a touch of dark fruit
In taste, it is much more expressive, though still quite boozy. On the front end of the sip I’m tasting sweet caramel, cognac, red grape, raw oak, cocoa powder, and a general booziness. The swallow brings notes of fusel alcohol, raisin, cocoa powder, earthy whiskey, rich toffee, and caramel
A full still body results in a thick and hot beer. Finishes boozy but with a nice complexity
This was great, but I honestly think 5 oz was enough. It reminds me of a second rate Utopias with all the booze. Good stuff

Pretty sure I was suckered into buying this bottle due to the beautiful, classy artwork. I put it off for months, literally, but eventually this 16.9 oz. bottle found its way into my clutches.
Blacker than Sirius with minimal bubbles (albeit with significant staying power). The nose is deep malts as a sideshow, but it’s really all about the shock & awe of the barrel.
Straight Barrel: Cognac is a stunner. Sweet roasted malts are backed with a heavy burden of cognac & strong side of alcohol; the marriage is borderline perfect. There’s a bit of this & a bit of that, but who cares? I could drink this until the Twins win another pennant (spoiler: not likely this decade).
Simple, straightforward, & bloody delicious. A masterclass in what a top-flight brewer can do with a great stout & good barrels. Brilliant beer.
