Collaboration with The Veil, Weldwerks, and Side Project

12-37 month blend of barrels with our friends The Veil, Weldwerks, and Side Project. We all combed through our barrels and put together a blend with 37 month Rittenhouse Rye, 12 yr old Weller barrels aged for 36 months, 32 month old Blanton's barrels, 22 month old 7 year Weller and Heaven Hill barrels, 17 month aged 14 year old Old Fitzgerald barrels, and many others to create a stout blend over 3 years in the making. This version has been treated with toasted hazelnuts, vanilla and cacao nibs to make an already rich and delicious beer even richer.

2021 Poured cold to a Glencairn glass. T H I C K pour. Motor oil viscosity. No head. I think carbonation got stuck in it. Nose is complex: lots of dark chocolate all over, with drifting wafts off the hazelnuts, vanilla, and cacao nibs…not all at once, but rotating. First sips are just like the nose, but add a boat load of mellow bourbon and a healthy dose of barrel woodiness. Similarly, the bourbon flavors dance around, sometimes a little bright, some times a little dark. Darts of rye hiding in the middle and rear. The cacao nibs bring a nice cleansing vibrance. Mouthfeel is very heavy, bordering on syrupy. I think the hazelnuts are likely contributing to that. 13% ABV hides any biting aspect, and doesn’t elicit any warming effect. Having had a couple WeldWerks coconut stouts, the viscosity reminds me very much of them. It’s Mortalis-stout-range thick, without any slurry in the bottle. I’m glad I opted for the smaller sipper glass. A wide-mouth glass would be prone to chugging this beast. The cold start might stunt this too much, considering its viscosity, so I think a warmer start will open those barrel flavors more readily.
