Our Illa stouts are blended from 19 and 16 month bourbon barrels. This version was then dosed with 2 pounds per barrel of whole Papua New Guinea Tahitensis vanilla beans, which provide some of the common vanilla sweetness, accented by notes of caramel, cherries, and faint woodiness.
