J. Wakefield Collab aged maple bourbon barrels
We’ve done a number of Snowbirds variants over the years but this has to be our favorite. In addition to Snowbirds usual marcona almond, coconut, and cacao nibs we also add maple, molasses, wild thai bananas and some milk sugar. Very decadent. Aged in a mix of 14-22 month bourbon barrels.

Look - Black and thick with nice tan rimming
Smell - chocolate coconut maple syrup
Taste - same as smell but almond cinnamon first and very very slight banana at the end
Feel - Full body light carb
Ovearll - not bad, pretty sweet

Pours thick and pitch black, zero head. Aroma is predominantly coconut and banana with some sweet maple and light cinnamon on the finish. Banana is the first flavor I taste, quickly followed by more banana. It pretty much overwhelms the beer - hope you like banana. After the swallow, I pick up chocolate fudge, light cinnamon, and coconut. Thick and viscous with minimal carbonation. Overall, considering all the adjuncts in this beer, I wish the banana didn’t mask most of them. But I still enjoyed it. A lot.

Bottle. Tan head. Black color. Thick.
This destroys the other snowbird 7 variants. Not even close. Beautiful cinnamon and fudge. Molasses, bourbon, vanilla, and big coconut. Maple syrup sweetness. Warming, smooth. Love everything about this. Pastry stout, but done right.
