You really can't talk about Austin without talking about breakfast tacos so we whipped up this West Coast IPA with the Pinthouse Pizza crew as a tribute. We dry hopped with ample amounts of Simcoe, Mosaic, Krush, Krush Incognito, Krush Cryo and Columbus Cryo to make a West Coast IPA dripping with pineapple, mango, sweet citrus and some fruity dankness.

Pours a bright near-full opaque pale straw, clear and fizzy.
Not much on the nose, slight hints of morning dew, citurs
Notes of pineapple, very cryo forward
Strongly hopped, very dry, finishes very cleanly, very crisp.

Dated 12/25, into an Ethereal Brewing tulip.
Pours a clear greenish gold with some good white foam, very clear with lots of bubbles. Aroma is very dank and very bitter, lots of white wine funk. Flavor is white grape, some funky bite, and diesel. It's exceptionally dank with lots of stone fruit and low sweetness. It's also very crispy but shockingly fruity without being creamy or thick. The fruit flavors feel exceptionally dry and it reminds me a lot of a good dry sparkling wine from all of the melon and citrus flavors. There's just a touch of light malt that's really helping balance out the dry citrus. Finish is still very dry, a little sweet, but just crisp enough. Feel is good, very hoppy and rather heavy but appropriate for a proper big IPA. Body is lower which helps and it's still rather crunchy and drinkable.
Overall, I dislike modern WCIPAs, but this one hits and delivers on all the dry promises of the style.

This is a good representation of WCIPA, something most EC brewers struggle to emulate. Cloudy mango in color, it leaves an initial amount of lacing while providing strong sweet orange, mango, and pineapple scents. Sips give an abundance of Krush hop notes, namely sweet citrus candy and mango flavors. This isn't a sweet beer, however. Hop astringency becomes prevalent with a moderate drying bitterness coming through. Drinkability is very high, and as I type my glass is nearly empty. Feel is spot on for the style, not syrupy whatsoever, no soap, just a lighter bodied well carbonated blanket of hops. Overall excellent

(23 days old) Yellow gold with faint haze. Fresh dank pineapple aroma. Tropical palate mostly with some spicy citrus and distinctive dank finish. Very fresh with lots of individual character.
