Pours a hazy straw color with 2 fingers of effervescent white head. Solid retention. Leaves a nice crown of lacing as it dissipates.
The aroma is floral with lots of white wine notes. There's some pear notes, as well as some apple cider vinegar with some funk and lighter notes of oak chips and vanilla.
The flavor is exceptionally fruity, bringing notes of grapefruit, lemon zest, white grapes, orange peel, green apples and pears upfront. There's a wave of yeast and peppery spices with a bit of funk and wood chips. There's a sweet, underlying vanilla character on the back. Nicely complex.
The feel is light bodied with lively carbonation. Crisp and nicely drinkable.
Overall, this is a great saison that wouldn't look too out of place with a Hill Farmstead logo. It's a "wheat beer" that is subtly tart, very complex, and highly drinkable. As a warning, the bottle gushes upon opening. Be careful.
