Mixed-fermentation saison brewed with Maine honey

A multigrain saison brewed with nearly 200lbs of Swan’s wildflower honey. After multiple seasons maturing in an oak foeder, Omniflora gets finished with another healthy addition of honey for bottle conditioning. Delicate, deceivingly dry, and wonderfully accented with a warm floral quality from our favorite lil’ foragers.

This is a clear Saison, with fine beads of carbonation randomly disbursed throughout. It is straw gold (SRM 4-5) with a big 2.5" fluffy off-white head that ultimately compresses to 1/2". Puffy lace coats the fisheye pint glass. Adding the last 2oz drops a bomb of yeast, imbuing a milky opalescent glow.

Sweet and floral from a distance, lemon races outwards as it is poured. The wild yeast is obvious long before the glass approaches. Some horse blanket funk mixes with mildew and farmhouse must. Fermented apples give way to honey as it warms. Warmth also intensifies the earthy yeast.

It is very dry upon entry, with a fairly firm bite of tartness. Faint sweetness accentuates the mild bitterness similar to an unripe green apple. Lemon/lime shows up, along with a light touch of honey. The finish is long and sharp, similar to white wine. The added yeast brings earthiness and muddies the profile.

Carbonation is high and expressive, bursting on the tongue with each sip. The body is light to thin, with the stiff and sharp texture of fine nylon. Alcohol is as expected.
I am looking forward to the second half of this bottle, to be consumed with mussels broiled in lemon garlic sauce. The beer is better suited to warmer weather, however there are no complaints today.
