Notes / Commercial Description:
This tart wheat ale is fermented with lactobacillus and finished with our house mixed culture of wild yeasts. Dandelion root in the kettle and dry hopping with Chinook and Centennial combine for an herbal, citrus, and pine character that balances the bright and fruity acidity. Our ode to spring!

Growler from the brewery.
A clear straw yellow with a rapidly receding white head, this looks solid. The nose beautifully captures the best characteristics of various BWs I've had. Fresh and snappy wheat, raw, grainy and rustic, faintly grassy, a touch of mineral-y white wine (think the New Glarus Unplugged BW from many years back), a bright lemony tartness. The hops add a complementary citrus and mildly floral note as well. The palate opens crisp, lemony, mildly limeade like, actually, minus sweetness, along with a grainy, wheat character. The mild grape notes are apparent on the mid-palate, mildly verjus like with a little mineral and the herbal dandelion root character appearing . Drying, tart on the finish with a blend of lactic sourness, a little yogurt and some wheat, this feels great. Despite the low ABV, the wheat dextrins add nice structure to the palate. Excellent, inspired stuff.
