We’ve aged Dire Wolf in Cognac barrels used to finished 11.5 year old George Dickel Bourbon for 21 months. Rich dark coffee and tart montmorency cherry is interwoven with vanilla bean, cognac, and whiskey notes. This sipper is best slowly savored as the glass warms over time.

From the 8 oz bottle in a snifter. This Valensbeer (Valentine's brew
for the Little Lady and myself) pours a murky blackish brown with a
modest head of khaki foam that sizzles to a thin ring with nice legs.
Nose of heavy cognac, vinous wine, dark cocoa, subtle vanilla, char,
oak, cherry. Flavors pack it in with dark cocoa, char, cognac, merlot,
tart cherry, coffee, tobacco, leather, and subtle smoke dashed with
earthy vanilla and dark bread. Mouth feel is full, moderately slick,
coating, rich as the day is long, warming, and finishing with a bitter
malt and lightly dry vinous cognac finish.
Overall, this one is a palate buster. Big, Bold, and rich.

Continuing to clear out the good stuff, we have another WR small bottle, poured into a snifter. The drink pours a deep cola brown with a small tan head that fades right away. It smells of chocolate, cherry, and vanilla with some alcohol. The taste follows. The cherry is very up front, then mixes with the chocolate and vanilla. It is tart. Mid-carbonated, creamy, but also slick and warming. There is a baker's chocolate/coffee bitterness on the back end, a bit of smokiness too.

8 ounce bottle, packaged February 2023. Served in a Wolf's Ridge Dire Wolf chalice, the beer pours dark brown/black with not quite an inch tan head. Head retention and lacing are both decent enough. I like the aroma, the brew smells like coffee, cherry, vanilla, cognac, dark chocolate and roasted malt. I think the taste is pretty close to the aroma, but there's the addition of some dark bread, oak and burnt/charred malt flavors. Mouthfeel/body is full, it's slick and a bit creamy with a moderate amount of carbonation. I thought this was pretty good, but then for the most part I'm a fan of the Dire Wolf variants in general. Certainly worth picking up if you come across some!
