Czech-Style Pilsner - 5% abv

Did you know England was the first to manage making pale malt (that didn’t smell like a campfire)? It was them sheisty Austrians and Germans that sneakily “borrowed” the innovative process, took it back to their homelands and began making lighter colored beer…eventually brewing the beer that has dominated the world since then…pilsner. We wanted to pay homage to England for its hand in making “the beer of kings” so we added a bit of English crystal malt to a Bohemian Pilsner malt base, saturated the wort with Czech Saaz hops, then fermented with THE Czech lager yeast.

This beer reminds us of the lovely Czech quote, “in times of great decison, have another beer”.

Pours a slightly fogged, largely clear golden body capped with multiple fingers of soapy, eggshell-white foam; good head retention leaves a half-finger of creamy cap, large, frothy collar, and myriad chunks of webby lacing ringing around the walls of the glass.

Aromas of soft biscuit and a deft floral backing open as a subliminal minerality courses and straw undertones firm over time, culminating in a rounded yeastiness establishing the ultimate backbone of the bouquet.

Taste brings biscuit and yeasty underpinnings upfront, accented with hints of citrus peel and florality into a grassy development past the mid-palate; straw touches the back end, while white toast and lemon peel fade through the finish.

Mouthfeel shows a light body and a rounded, fluffy carbonation; taut texture yield a crisp mid-palate into a flaky back end as a focused bittering lingers in the backdrop.

A clean yet beautifully toned expression of well-lagered subtlety; floral, bright, and rife with a fresh, bready shading throughout.
