Brewed with a blend of eight peppers that we grew on the farm this year including: Habanero, Jalapeño, Ghost, Thai, Cherry bomb, Cayenne, Hot Portugal, & Tabasco.

On tap at Whole Foods.
A - Light hazy gold pour with thin, bright white creamy lacing and low carbonation.
S - Earthy, citrus barnyard funk on the nose with a little bit of acidity and an ever so slight bit of pepper presence.
T - The entire first half of the sip is citrus twangy fruit funk and then the peppers kick in on the back of the sip to kick your backside and scrub away most (not all) of the fruity funk.
M - Medium body, leaves the mouth watery with some coagulation and definite heat in the back of the throat.
O - Dig this beer and recommended if you like beers with hot peppers.

2020 vintage, courtesy of my brother. i love these guys, so thankful to get into their beers every once in awhile, always impressive on the fermentation side, and this one is real clever, done with a mix of hot peppers! super uncommon in wild beer, ive been stoked about this bottle for a long time and finally the time was right! unassuming cloudy pale brew, a shade more orange than straw but still really light looking under a creamy inch plus of pale head, looks like nice bottle conditioning on this. the nose isnt even spicy, i smell the peppers but its almost more of a citrus thing than a capsicum, earthy and vegetal in a good way, they seem raw and fresh not roasted or anything, and the rest of this is familiar from some of their other beers, a slightly tart, slightly bretty, now slightly oxidized mixed culture type thing, some sulfur for a minute, pale and raw wheat perhaps as base grains, fluffy and light looking, smelling, tasting, and feeling. the peppers are all on the back end of the flavor, its tart saison type beer or wheaty wild table beer up front, minerals and starchy dry grain, cool animal type funk, some white wine character, and then finally the peppers, habanero and thai types to me, some orange zestiness in there with them, faint green jalapeno type too, but this seems more red hot than green hot. i love how fresh they, how restrained the heat is but how it still sits deep in the back of my throat. not quite gone at the end of each sip, it stays a bit, but its not unpleasant and works well with spicy food, fighting fire with fire! its dry, flavorful, fermentation forward, mature now, and the peppers are really unique with these yeasts. i liked this one a lot, tart and interesting! underrated for sure...

Pours a fairly clear bright yellow with half a finger of fizzy white head. Aroma is funky and tart, but I'm having trouble picking up any specific notes other than general earthy funk. First sip was mostly standard wild ale funk, with a little bit of spice on the finish. With the second sip, the spice really kicked in. Clear peppery spice on the tongue that's mostly balanced with the funk. That said, holy crap does the spice show up on the way down. I'm sensitive to spice, but my chest feels like it's on fire. Good carbonation and clean.
Overall I think this is likely exactly what they were going for, so I'm not going to be overly harsh with my scores, but this is not necessarily my thing. If you love peppery spice, you'll probably really like this. If you're a wuss like me, maybe not so much. Will be interesting to see if I can finish the whole beer.

No bottling date (purchased from brewery in 6/2020, so bottled sometimes prior to that date); consumed on 2/5/2022
Pours a translucent, pale lemon body capped with a rocky finger and a half of fizzy white head fading quickly to a few paper-thin islands of cap, a slight, fuzzy collar, and the occasional web of lacing holding tentatively to the walls of the glass.
Aroma opens to mossy funk, semi-acidic and sparking tones of hot pepper jam into jalapeño bread and ripe habañero; a level, almost succulent heat displayed past the middle of the bouquet finds a resounding pickled pepper medley toward the close.
Taste brings a grassy, mild lacto-twang into an almost bready funk upfront, building to ripe jalapeño and habañero over the mid-palate; pickled pepper medley marries the more acidic elements of the funk to a bright and earthy finish.
Mouthfeel shows a light body with moderate-low carbonation imparting a delicate spritz as a mild acidity builds in the backdrop against more prominent peppery spice; wet textures accompany a bright, spicy twang over the back end as a flaky semi-dryness presents through a peaking finish.
A deceptively approachable and fun wild ale, the introduction of fresh, peppery heat to the softer nuances of a playful, funky twang consequently amplifies a budding savory component to layered gustatory engagement.

Poured from a bottle (no date I could find) into a small stemmed Plan Bee glass
L: clear light yellow gold with a decent, effervescent white head. First thought champagne, a bit more like apple juice now that it’s in the glass. Some bubbles slowly rising
S: nice, interesting nose here. Leads with the base farmhouse/wild ale character of Plan Bee, followed closely by this hot pepper jam aroma I really like. Hay, grassy, lemon, dough, little bit of funk, plus a habanero jam note
T: awesome. A clean, fairly crisp wild ale flavor with this perfect hot pepper note that quickly follows and lingers throughout the finish. A slight warming, especially in the back of the throat, but nothing too aggressive. Just a well done flavor, present but not obnoxiously so. Get hay, grass, some bread, green apple, lemon, habanero pepper. Medium long finish, driven by the spice
F: medium carbonation, light body, rather crisp very drinkable
O: had expected to like this, did not disappoint. Wild ale base from Plan Bee paired with a very well done hot pepper aroma and flavor, highly recommend

Smell is lactic sourness, apple, mango, and slight hot pepper sauce, that becomes more pronounced as the head fades, and the beer warms.
Taste is hot pepper sauce, slightly sweeter , more fruity, and more complex than tabasco sauce. Somewhere between hot homemade ketchup and red hamburger relish. I'd guess that some of the peppers were sweet AND hot . There is also some sour apple, and lemon flavors. On a 0-10 heat scale, with ripe jalapenos being right in the middle, this is in the 3.5-4.0 range.
Feel medium-light, with moderate, very fine carbonation, typical of this type of brew. Some residual heat at the back of the throat.
Overall, this is good, if you like peppers, & heat .(I do ;) ) Not something I'd want every day, but , as expected, a perfect companion for the omelette that I'm having with it.

S - Aromas of really big vegetative pepper notes, really light saison yeast. Huge spicy peppers, capsaicin oils galore.
T - Taste is similar to the nose with big sweet and salty notes up front, really weird vinegar lemon notes. Nice sweet tobasco sauce. Finish is lingering heat.
M - Mouthfeel is lightly carbonated body is light, really thin and watery.
O - Overall this was a rather unique but underwhelming. Sweet heat.

Nose tons of pepper like loads of vegetative pepper, hot pepper, green pepper, sweet Italian pepper, a little saison like malt note but barely, lemongrass too
Taste starts with a bunch of heat, hot pepper more cayenne like, big sweet rush of malt and sweet candy malt, honey almost, then briny salty thing, little tartness too, fruity almost lemony, lemongrasss, fair heat, big vegetative green pepper too, spicy candy, sticky finish and lingering long pepper
Mouth is med to lighter bod, little tart, light carb
Overall I thought I remember this being better in the sample I had, yeah tons of pepper and heat but that's about it, a little tart lemony and some lemongrass and sweet like, but thin, light carb, light body, not much beer, a little disappointed.

I knew what I was getting into when my buddy cracked this...nose is heavy heavy on the peppers. Flavor is just all pepper. Not overly spicy, but its like biting into a pepper. I'd rather dip my pizza in this than drink it.
