im not sure there is a brewery in the game i look forward to drinking new beer from more than these guys right now! my brother hooked up four little bottles in a recent session, and each was incredibly unique, special, and delicious, they do such a nice job with curious ingredient combinations, terroir, and wild ferments, i just love them! this one is done in red wine barrels with plums and shiso, a unique japanese herb i have only seen in beer from jester king to date i think, if there was another one, i cant recall it now. its a great combination, as the herb is uniquely savory and distinct, while the plums provide just a bit of concentrated sweetness that sets in nicely against the lactic acidity and the other dark fruits in the red wine, so much complexity here! its interesting that they call this a dark ale, its quite pale in the glass for that designation, cold pressed dark malts sounds like something i need to learn more about, and i dont get a lot of roast or cocoa notes in here or anything, are they perhaps not mashed in the traditional way? id love to know more about their inclusion and the process, but the base of this beer is pleasingly earthy and wet without any sweetness or richness to it or anything, but there is plenty of body, even with the tannic wood and wine and the wild acidity. some cool funky brett to this too, blooming flowers in spring, fleshy ripe plum all the way through, jasmine, lavender, and sage all come up. raspberry in the wine, cherry too, and the shiso to finish which seems to have just a bit of bitterness to it as well in here. its way more pronounced than i thought it would be here, and its delicate, so nice in combination with the delicate plums, it might get lost to other fruit in this dosage. some nice fizz to this, increasingly sour as it warms but not as outwardly harsh as some of theirs have been before. the herbal character of the shiso with the wild yeasts make this amazing, like nothing i have ever had. how is this brewery not getting more attention?! this is perhaps my favorite of the ones we opened the other night, maybe second to the herbane, and one of the best beers i had on my recent trip back east! im so intrigued by this dark malt thing too...
