The aroma is the real standout in this cool and unusual sour beer. While you get hints of tomato and Tabasco in the flavor, which is aggressively sour and acidic, the nose brings celery and tomatoes and tons of complexity. It’s a fun beer which I might ding just a smidge for its enamel stripping acid levels, ultimately a bit of a distraction from all the tasty adjuncts and makes the bottle a bit of a chore to finish.

Translucent orange-gold, about the color of tangerine juice with a little pineapple mixed in. Light, quickly-dissipating very fine white head, that leaves a 1/16" ring and a tiny bit of lacing.

Smell (from the glass) is lactic sourness, lemon, (sweet) pepper, fresh celery leaves , and bit of undefined trpical fruit mix. A sniff of the opened bottle gives a strong aroma of tabasco sauce, and a hint of dried tomato, neither of which is apparent in the glass.

Taste is initially sour mix of mango and apple. As it goes along there is the tangy flavor of dried tomatoes that have been rehydrated, with some soft, building pepper heat, and some light, bright, vegetal flavor that I assume is from the celery & basils (& beets?). As swallow commences there is some pepper and horseradish flavor, that builds and lingers.Slight earthiness that might be from beets, horseradish, or both. A fine line of barely-perceptable, but sharp bitterness exists throughout.

Feel is light, barely oily, with light, very very fine carbonation that puts an exclamation point on the tip of the tongue. Pepper heat if apparent at the back of the throat & maybe the tip of the tongue . Some light prickle & warming on the roof of the mouth and tip of the tongue from the horseradish. A pleasant slow warming overall - I'm starting to sweat :) - that isn't immediately noticeable, but is quite apparent now that I'm halfway through it .

Overall - wow! It's not a carbonated Bloody Mary - don't expect that. It's more of an homage. It comes across as a tropical fruit sour with Bloody Mary elements mixed in. Those elements, especially the pepper and horseradish could, end up being either overwhelming, or being almost imperceptible . Not the case in this beer . Everything is well-balanced, and deftly executed. A joy to drink. Highly recommend it.
