A rich and robust imperial stout with roasted malt and hints of molasses and licorice. We named this beer in honor of a member of our Kalona-area community who has been telling friends for decades, “You Be You.”

Date on can states 03/06/18
A lot of yeast clumps on the bottom of the glass after the pour. Not an attractive detail. The head was short lived and not much lacing is left behind. Aroma of mildly roasted malt, chocolate, fruity esters, and earth. Nice big stout flavors featuring the dark malt. Bitter chocolate, lightly roasted coffee, grassy/herbal hops, and a bit of alcohol heat and booze in the finish. Solid body and carbonation. Full and rich. A solid imperial stout that I would drink again.

Was sent by one of my buddies out in Iowa, the side of the can reads "03/06/2018." Best by date? That's my guess.
This was poured into a snifter.
The appearance was a dark brown close to black color with a tan foamy head that slid off at a moderate pace. Nicely coated filminess surrounding the glass.
The aroma had a super nice blend of dark bitter chocolate nibs with a faint involvement of some earthy hops. Light on the milk chocolate, but that came through extremely subtle.
The flavor had a sturdy bitterness about it punching the roasty and sweet edges back a bit more than I may have wanted. Still, I have to say, it did follow through the more it warmed up. Nice aftertaste of the roasty to bitter and sweet portions of the chocolate.
The mouthfeel was about medium bodied. Very nice sipping quality about it due to the bitterness showing enough strength in it's ability to push down some stickiness that seemed to have crept up just a wee little bit. Carbonation felt pretty spot on. ABV seemed just a touch under than what was projected.
Overall, I need to find out when this was brewed because an impy stout at the projected ABV and the date stamped on the side makes me think that this is fairly old and I see that it is retired on BA. It's still very well done - even if this was a bit aged.

Poured from 12-ounce can into a small snifter. Appearance is an opaque deep brown, with a thin tan head that dissipates without leaving any lacing. There was a bit of a musty aroma at first, but it eventually gave way to some pleasant notes of coffee and dark cherries as the beer warmed from fridge temperature. These notes are prominent on the palate as well, although not quite as intense. Nice burnt-coffee bitterness and a little fruity, but a tad watery on the feel and an almost too-clean finish. I expected a little more body for such a big imperial stout. Still, a very tasty brew.

10 oz. pour into a goblet at the brewery, unknown brewing/packaging date, drank over 30 minutes
A: 3/3 - jet black coloration, little if any clarity (cannot see through), initial khaki-mahogany head settled into a frothy 1/2 finger head that persisted throughout drinking; moderate mixed-size carbonation bubbles emerging from the bottom of the glass, large alcohol legs
S: 10/12 - rich roasted malt complexity - coffee, chocolate and caramel; big alcohol notes as well; some residual hop aroma but certainly more muted
T: 18/20 - on the front of the tongue, there is a subtle English (grassy/herbal) hop bitterness that is quickly replaced by a bouquet of malt complexity that matches the nose - burnt toffee, coffee, caramel and chocolate; on the back end, there is an alcohol warming and finishes semi-sweet and inviting
M: 5/5 - large body, thick motor oil-ish coating, creamy, moderate carbonation
O: 9/10 - world class IS here that hits all the high notes of the style for me - not too bitter, roasted or cloying; would love to see how this base beer would barrel-age! highly recommended from an up-and-coming brewery with tremendous potential!
