Acme Boisener-weisse is a hyper-local beer made in collaboration with our good friends Michael and Soraya from Acme Bakeshop. They were kind enough to lend us their sourdough starter, made from an open-air culture of local yeast and bacteria. We took their tart and aromatic starter to a local lab to isolate the pure, fresh lactobacillus bacteria species. This beer then spends a minimum of 3 months in the bottle, developing its lively carbonation and complex sour character. Utilizing Idaho grown hops, NW barley, local wheat and local bacteria, Boisener-weisse is a truly local offering.

Bottle from the brewery, poured into one of my Berliner Weisse bowls. Lots of activity at opening, super carbonated, bits of sediment seen in the foam. Very high, airy head dissipates quickly, cloudy, muddy golden body, still fizzy. Green apples, tart cider, wine like notes, sour grapes all in the aroma. Tart, sour tree fruit tastes, some wit bier what notes. Very close to the original.

Cork and Caged 750 #6/120) ... Poured into my small wine glass tonight... fizzy light yellow.. plenty of yeasty notes make for a messy brew.
Nose shows light sour and more wheaty/doughy elements with a nice punch of sourdough with warmth... lactic notes are surprisingly light.
Wheat malt and something that reminds me of pizza dough.... very fizzy right now.. light lemon and a bit of yeasty dough funk..
Light body and proper ABV... but this one has big carbonation and a bit too much carbonic bite..
