Bottle from cellar, circa January 2018. Bright golden pour, fizzy head, fine carbonation. Aroma and taste come on like a true sour, dry and with a formidable pucker. Mandarins have fallen off a bit with age, but light citrus notes are still evident. I had initially rated this off the tank, prior to the barrels, and it was quite juicy.

This pours a beautiful shade of light yellow, like the sun peeking through some foggy skies, capped by a thin and wispy white foam that leaves little impression.
The smell is fantastic and simply elegant. Fresh squeezed lemon and orange, a soft oak tannin, and a touch of dried hay all wrapped up in a tart little blanket.
Following in true fashion, lemon and mild oak are thirst quenching and balanced. The Mandarins really pop here. They are not overbearing nor too light. Just a perfect medium ground bringing all the elements together wonderfully. The sour is only slightly puckering, but is again just right.
The acidity tingles the jaw, and the carbonation is soft and light. Well played in fact. Its 6.3% seems to be the perfect sweet spot for this, as it is easy to drink and in no way distracting. A true thirst quencher, the best way I can describe this is bright and light like a single ray of sunshine.
Sign me up to The Barrel Fiend Club because this is outstanding. A tip of the cap to you Woodland Empire. I will be seeking out this line in the future. Cheers.
