Our saison uses yeast isolated from a variety of cacao thought to be extinct, but rediscovered in Peru in 2007. The fruity, spicy, and wild-like characteristics of this strain make it an ideal choice for saison-style beers. We built a basic grist bill with some BruMalt and caramel brown grains to highlight the yeast.
