A collaboration with our pals at is/was brewing. Wasting time is a wild thai basil saison fermented with yeast from our garden and brewed with grains sourced from sugar creek malt co. in Lebanon, Indiana. But this beer represents just half of the collaboration. We traveled south to is/was to brew a rendition using their house yeast: *stay*.
Malt: vienna and triticale malt.
Hops: saphir and grungiest hops

Cloudy dull orange/yellow appearance.
A rough pour yielded a huge white head; a thick curtain of lacing remained.
Yep, lots of basil in the nose, plus some fresh artisan soap.
Medium mouthfeel.
Soap & banana flavors up front; dry basil notes on the finish.
Hey, it's a basil saison, and that's what it tastes like...but it's not something I'd reach for again.

Pours a cloudy pale yellow color. Good two to three finger white head forms on the beer. Aroma has notes of lemon, lemon zest, yeast, fruity esters, grain, and a light kiss of basil. Taste has notes of lemon, lemon zest, tangerine, white bread, grain, and a touch of basil with a strong yeasty note permeating the beer. Slight peppery and herbal notes come through on the back end. Feel is moderately bodied, a bit rustic, with prickly, lively carbonation.
This is a well made saison that just worked really well for me - the tangerine/lemon notes work really well with the light basil notes and and the yeast. A very enjoyable beer from Middle Brow and Is/Was.
