its cool that these guys are getting so ambitious, this one was brewed for collab fest i reckon, but they have to execute better than this, this is a slopper, even by homebrew standards, milky and thick and murky in the glass, under carbonated, and funky in a bad way. its a sake yeast fermented plum saison type from what i understand, its slightly sour, cool tart and natural plum though, some white wine character and dried flowers from the yeast, but this has a hard time being delicate with such a thick starchy body, maybe some rice in here to keep with the sake theme? it looks like the water from the first washing of rice, its that milky, just a little pink from the plums. some elements to like though including the sake yeast when its cold, the plum, and the uniqueness of it all, but its stinky like a bad kettle sour, it drinks heavy as can be, and its almost intolerable when it becomes a little warm. i had way higher hopes for this, and while some in our group liked it, i think its more a product of folks being used to substandard beer in weird styles rather than this actually being appealing from an objective quality standpoint. i like the idea though, and i hope they make it again with a little more (a lot more) attention to detail...
