Introducing Paddle On, inspired by the Brut IPA style created by Kim Sturdavant at Social Kitchen & Brewery in San Francisco. A bright, dry, and highly aromatic IPA, brewed and dry-hopped with an ample amount of Mosaic and Ella, and finishing at 7% ABV.

Poured into a tulip, the appearance was a mild hazy pale orange color with a finger's worth of white foamy head sliding off fairly quick. Mild concave lace.
The aroma had a strong hop essence of slick grassy oily white peppery spiciness. Then citrus peel and mango with a light touch of grapefruit.
The flavor follows suite by leading with the same aromas already mentioned - sweet and semi-spicy in a sliding sort of way. Then a mild kick of white peppery spice hits in the aftertaste.
The mouthfeel was about medium bodied with a fair sipping quality about it. Carbonation felt fine. ABV felt as projected. The finish is fairly hoppy with the Mosaic.
Overall, quite a good IPA that I would love to have again. I don't know much about this Brut IPA just yet but if this done the way the Californians originally did them then I'll be all about this.

Pours a pale blonde hue with a thin head into my glass. Bitter citrus peel with mango and grapefruit as the dominant aromas. Massive dose of juicy hops upfront that give way to an acidic mouthfeel. It's incredibly quaffable, perhaps too much so take your time. This is one to be savored.

On the menu as a "brut" IPA. Described to me as a new style where an enzyme typically used for much higher original gravity beers is used on regular IPAs. I've never heard of enzymes being added to any beer but this one certainly has no residual sugar.
The look is similar to a New England IPA with a little less cloudiness. Very good foamy head provides ring and lattice lace.

Yes, this beer is quite dry which strengthens the biting hop bitterness. Not astringent, though. Moderate to fuller body with an elevated level of carbonation. Surprisingly short aftertaste given the power of the bitter finish. It's just short of sucking a hop pellet.
