L- Quite dark amber, pours with a white head that dissipates very quickly to sub-lacing.
S- I can smell honey here, quite distinctive.
T- Honey, but also a kind of woody toasty dryness. Unusual, like opening a chest of old pieces of timber for the first time in 20 years.
M- Medium-dry. Carbonation has cleared in the glass but remains in the glass.
O- It's not working for me, I get the honey, but the woody taste seems out of place to me.

A tribute to urban beekeepers.... farm-to-table has another rendition.
And the beer is nice.
It starts out Looking quite nice, crystal clear (like refined honey) with a decent foam and lace that sticks to the glass.
Smells are sweet, mostly malt and honey. Tastes are largely the same because I like sweet beers. Sits in my mouth, but not for too long. I had this beer instead of dessert and I was more than fine. But if the hop-heads of the world to ever warm to this recipe, you will have to add another rendition from bees that only pollinated hops. Think you can do that ?
I went on Hiver's website and they are sweet. I've seen this Sussex farm-to-London connection a couple of times and I've only been here 4 weeks. Anyway, I hope to visit them this weekend on the Bermondsey Beer Mile.

absolutely fabulous and interesting beer here, one of my favorite drinks from my entire time in london, and an incredibly delicious specimen here. the brewery apparently uses honey from around london to make this, and other flavors, which is a really interesting mission in its own right. the beer is a blonde or golden ale as a base, but the flavor is like no other, with perhaps the most distinct and deep and rich honey character i have ever known in any beverage, mead included. i dont even really care about the grain or the yeast here, although both are fresh, earthy, basic, mellow, and appropriate here, its just all about the honey. i taste the flowers almost the the bees pollinated, its waxy and sticky in the middle, but then pushing dry and clean later on, and i think it makes great sense that the malt is so light, i would hate to compromise such unique honey flavor with english maltiness. notes of orange, coffee cake, and honey candy are all here, and the beer is fizzy like champagne from the bottle, awesome life to it, and this just sort of feels organic, healthy, and brilliantly different. its crazy how the honey flavor is so strong without the beer being hardly sweet at all, and i could easily drink a dozen of these. id love to try some of their other flavors, this was really next level, a memorable experience for sure! a new gold standard for this sort of thing, smart, modern, super well executed. cool showcase of english bees and bee keepers!
