Our entirely experimental, and exploratory DIPA returns. After nearly 8 years of continuously brewing and attempting to refine our hop forward beers, we often feel the need to brew one that displays a certain level of cohesion, without it being about just changing the hop varietals, or just adding more of them. Our goal is to capture a moment in time that coincides with our current and immediate interest in hoppy beers.

In short, this limited release is about focusing in on a facet of the beer or process that we’re currently obsessing over… for this one, we became increasingly interested in using a proprietary blend of yeast strains.

Pours a completely hazy, dark golden orange body capped with just over a finger of fluffy, white foam; good head retention yields a few chunky islands of cap, a moderate, frothy collar, and myriad thin, speckled/webby lacing strewn around the walls of the glass.

Aroma brings resinous, sticky pineapple against the brightness of creamy lime sorbet upfront, steadied with an earthy grapefruit peel and an increasingly dank undertone toward the back end, where a white grape continuation peaks with orange zest accents.

Taste features underripe papaya grazed with lemon zest upfront, with wisps of grapefruit melding into tinges of pine over an earthier mid-palate toward brighter lime tones on the back end; clementine is met with white grape must and backing sensations of flaky wheat into the finish.

Mouthfeel shows a medium body with moderate carbonation and a slick texture with distantly creamy resins embracing a moist, more saturated dank tone into the mid-palate, drying after a brief, juicy peak to an almost aggressive prickle and mild-moderate bitterness on the back end and through the finish.

Comprehensively approachable while simultaneously enlivened by a twangy hop presence throughout, this one does little to stand out with any intensity, instead opting for a more balanced, enjoyably drinkable DIPA profile at the more refined echelons of the style.
