July 7th, 2015 - Blue Spruce's great take on the Kolsch style shows dedication to the lager side of the beer family tree. A beautiful hazy gold, it lights the table as the evening light peeks through the window, and the aroma is slightly sweet like a Spring day, and just a hint of flowers. The body is light and crisp and offers the same taste as the nose with a refreshing floral take. Also present is some lemon, orange and a depth like a heavy wit or a blond ale.

this one is now named laughing george, and it is currently on tap down at the brewery. i think its a nice simple beer, clean and easy drinking, appealing to lager and blonde ale drinkers alike, with essentially no yeast character whatsoever, and very little hops, its about the pale barley malt and the honey, and thats about it. i do like a bit more of a european grain quality to my kolsch types, and frankly without the classic yeast elements coming through a little more, its hard to really even believe this as a kolsch, but that doesnt diminish my enjoyment of it. its crystal clear pale golden in color with a short but lasting white head on it, affordably priced at their taproom. aroma definitely has some soft floral sweetness from the honey, its immediately evident, and in the absence of the european character, its needed. not much sweetness in the flavor, its nicely dried out here, but the honey is wonderful with the light malt in here, fresh and springy, simple but approachable and not boring for a lighter brew. the honey is awesome, delicate but significant here. light body and high carbonation makes this a volume drinker and a really refreshing glass of beer. nice with their spicy green chili in here.
