The 750ml bottle was a gusher, but eventually poured a lovely hazed orange-brown color with about two fingers of tan-tinted head. It leaves thick sheets of lacing and has a creamy consistency.
I got strong apple cider when first opening the bottle, but the aroma seemed much fainter in the glass: apple cider vinegar, lightly sour and tart fruit (possibly apricot), some oak and light must. All very understated and quite pleasant.
Delicate tasting as well. Again with some lightly sour, lightly tart fruit (apricot, apple, red wine) and some oak. There's also a slight cheesy funkiness lurking beneath that, to my taste, is a negative, although the overall flavor profile is still pretty good. Very dry finish.
Light bodied with strong carbonation -- although not completely over the top.
This beer is oozing with potential. For the most part it's very refined and artfully done, but I suspect the yeast is starting to take it into areas that weren't intended. Can't imagine this particular bottle would have improved with age.
