When head brewer Josh told us he and Ellen, his wife, were playing around with fermenting tepache at home and might want to incorporate some of the ingredients in for a Horse & Dragon lager, we were intrigued. A little discussion and research revealed that this traditional Mexican fermented fruit beverage is now made with pineapple, ginger, cinnamon, and chiles. Thinking that that many strong flavors might overwhelm the great lager base he had planned, Josh decided to limit the recipe additions to pineapple and ginger. We can’t think of a more refreshing summer drink. Ginger on the nose combines with floral and tropical hop notes. Sipping the beer you could just enjoy a light and eminently refreshing summer beer, or you could try to analyze the different stages of grain – no ginger – no pineapple – no hops -- on your tongue. Like a beautiful tropical umbrella drink, only better, because: beer!

I thought this was really good after several tastings. The pineapple is subtle but really good, the ginger is probably even more subtle but overall just looks and tastes refreshing

this is a pineapple lager, a fruit that has been showing up entirely too much in beer this summer, but its better than most in that it isnt sweet. notes of ginger and lime too, but my pint was served with a lime wedge on the rim, so that could be part of that. its a bright yellow mostly clear brew with a good head, visually more substantial than a lot of these, which i like. it doesnt smell like much, full bodied as it is when i drink it, almost under flavored too, but the pineapple seems natural, probably just mostly fermented out, which is far preferable to me over an unnatural, forced, or sugary pineapple complexion. some interesting flavors here though in the absence of the pineapple, odd peppery esters, lager yeast, lime and zesty ginger, clean though in the end, even with the body, still refreshing and dry, very drinkable, not overdone. i have always like the beers these guys make, honestly have enjoyed just about all of them. this is a little below expectations, but an easy summer drinker nevertheless.
