This golden-hued 10% Triple IPA hopbomb is as West Coast as they come. Packed with Ella and Sorachi Ace hops, this bitter beast features a touch of sweetness accompanied by some soft spice notes. Drinking an entire bomber solo is not recommended, you may want to wave David back in to help.

Bomber purchased at the brewpub; no bottling date and served barely chilled. Billed as a triple IPA with Ella and Sorachi Ace hops.

Pours a clear, brassy golden-amber colour, briefly sporting a half-inch cap of soapy, bubbly suds. It fades within a minute or two, reduced to a frothy collar and a scant smattering of lace - looks about right for a west coast DIPA. Bready malts and caramel on the nose, with notes of orange, citrus peel, apricot, and a faint hint of dill weed. The alcohol is discernible, but not assertively so.

It's really not bad at all - the alcohol is masterfully well-hidden, but the flip side of that coin is that the flavour profile kind of lacks the intensity you'd expect out of a triple. I'm getting bready malts and caramelized sweetness, buffeted by orange, stone fruit, and finally some floral hops coming through by mid-sip. Finishes a bit spicy, with suggestions of anise and cilantro followed by a pithy, floral, lightly caramelized aftertaste that is only slightly warming. Medium-full in body, with middling-low carbonation that gently brushes against the tongue, resulting in a smooth, soft mouthfeel. If asked to guess the abv, I'd probably say 7, 7.5-ish: this is much more easy to toss back than it has any right to be.

Final Grade: 3.65, a B grade. Go wait in the car, David is better than their last triple IPA, but still lands on the underwhelming side of the spectrum - i.e. it's alright, and passable for what it is, but there are cheaper DIPAs at the LCBO that blow this one away handily. The west coast IPA foundation is solid, while the spicy contributions of the relatively uncommon hop strains supply an appealing secondary dimension. I doubt I'd buy it again at this price, but I don't regret the purchase.
