III (pronounced as “three”) is our hybrid of a Tripel & a Double IPA brewed with brettanomyces. III is brewed with pilsner malt & a touch of unmalted wheat along with copious amounts of hops.
This version of III is lagered in Charonnay barrels from Napa, California and is then dry hopped using only Centennial full cone hops.

Pours a completely hazed out burnt orange body and is topped with mounds of cascading, creamy white foam; relentless head retention holds steadily, eventually receding to a finger of equally creamy cap, a dense collar of froth, and a thick, chunky walling of soapy lacing.
Aroma opens with crackling peppercorn spice subdued with musty phenols and quiet tones of pineapple and tropical citrus; no shortage of mild fruity funk, presenting moderately with an almost sweet lemony acidity phasing carefully to dried lime leaf over time; stewed mango and some other spent fruits greet the close.
Taste shows notes of raw earth and brush upfront, softened by tones of rose petals into musty, yeasty phenols on the mid-palate; some wet grass, wilted mint, lime leaf, and spiced orange peel highlight a sharpened back end as the finish comprises of stale white bread with touches of wheat and a dirty tree root finish.
Mouthfeel balances a medium-light body with a perfect upper-level carbonation, light, spritzy grit along the mid-palate which becomes increasingly drying, almost peppery and aggressive; a touch savory in the swallow with a tinge of wetness before a bone-dry lingering takes hold; impressively hidden alcohol presence throughout.
The easy quenchability of a well-made tripel meets the splintery, earth grit of a well-aged, Centennial-laden DIPA; there's everything from tropical fruits to raw earthy tones to digest in this one, with both styles meeting in the middle for a unique yet surprisingly calm hybrid.

It's a mix between a brett double IPA and a belgian tripel. Needless to say, it's the closest to Anchorage's Bitter Monk that I've ever had. And because of that, it's wonderful
