Festbier cold matured in oak foeders. It is brewed using a traditional double decoction mash and hopped with German Spalt & Spalter Select. After the boil it rests in our copper Coolship for one hour. It is then transferred over our baudelot cooler and cold fermented. Finally, it is lagered in our oak foeder prior to release.

Pours a hazed brownish auburn body capped with multiple fingers of tight, off-white foam; excellent retention fades to a collar clinging to the walls of the glass, a healthy layer of cap, and layered chunks of soapy lacing. A slightly murky body is really the only knock an an otherwise beautifully-constructed märzen.
Aroma brings an airy minerality welcoming you in, guiding into a more earthy tone toasted oak while malty caramel sweetness is rounded and bursts briefly; drier notes bread crust resume heartily toward the close.
Taste opens with a familiar, more floral minerality and light grassy hops; malted, bready sweetness peaks along the mid-palate, leading to a deft touch of dry caramel tone underlying more defined charred bread crust and sweet smoke on the finish.
Mouthfeel features a medium body bolstered by a rounded, semi-creamy moderate carbonation; light and crisp consistency along the palate as it becomes increasingly silky and continuously drying; minutiae of bitterness and light malt sweetness make for a lasting, yet still clean, finish.
There's an almost unplaceable uniqueness to this Oktoberfest lying somewhere between its clean minerality and robust, expressive malt profile; the result is universally balanced and pleasing, and without any doubt in the top tier of American Oktoberfests I've sampled.

This one pours a golden orange color, with a small head, and lots of lacing.
This smells like toasted malt, toffee, grain, minerals, spicy hops, and toasted oak.
This is really great. The oak adds a nice spiced character and also seems to deepen the malt backbone. The malt character is deep - with toffee, baked bread, and an approprite level of sweetness and graininess. The hops are also spicy and with the appropriate and expected bitterness. This is top level stuff.
This is creamy and rich, with a light but substantial body, and a really great level of drinkability.
This works so well for me. I really can't lose with this brewery.
