Quetzal is a blend of a young sour ale spiced with coriander & orange peel and a young sour ale matured in gin barrels with lemons. Quetzal is tart, citrusy & incredibly refreshing.

Poured from a can (no date, purchased at the brewery back in October) into a Belgian glass - said drink fresh, aged accidentally

L: cloudy yellow, massive white head. Practically exploded out of the can, serious carbonation very effervescent. Some particulate from the bottom of the can

S: lots of lemon, gin barrel comes through very well. Coriander there, nice spice. Aroma is sharp, tart, very inviting

T: follows the nose, tart and sour with lots of lemon/citrus flavor. Get some gin spice, really delicious and thirst quenching

F: medium/high carbonation, nice light mouthfeel, crisp

O: a very good sour, and despite being told not to age this beer held up very well. From memory flavor was more defined at OEC/fresh from the can but this held up well

No canning date present (released week of 9/11/19, so presumably canned within a few days of that date)

Pours a clear golden lemon/straw body, gushing and eventually settling to a sizable and thick eggshell white head; excellent retention fades slowly to a brooding, dense collar, paper-thin cap, and array of webby, soapy lacing sprawled about the glass.

Aroma is bright with fresh lemon zest and backing touches of coriander and peppery herbal gin developing quickly; lime and oaky funk opens over time, followed with tones of musty burnt wood and wet incense.

Taste brings a modest array of musty lemon funk, old citrus rind, and orange peel to start, building to a heavily funky barnyard/botanical spice lingering into the finish with a boggy, mossy overtone.

Mouthfeel has a light body with moderate, consistent, and semi-airy carbonation; a deep acidity pushes a tempered tartness across the palate, where an oily middle transitions to a wet, slightly prickly swallow.

High drinkability and a deeply funky, fruity complexity define this one, while just enough gin barrel comes through to evenly mellow the acidity for a wild ale approachable at any juncture.

Pours hazy with a citrusy gin like flavor. The best part of this beer is the aftertaste which is truly unique and tough to describe. Light bodied and not overly sour.

This one pours and dull and slightly hazy yellow color, with a small head, and lots of lacing.

This smells like a great citrusy gin, with lemon, lime, botanicals, oak, old rind, deep funk, and a light citrusy hoppiness.

This is really, really great - the gin barrel works so well with this beer, adding a super refreshing funky lemon and lime flavor, along with some drying oak, a huge prickly funk, and some more typical citrus type flavors. The blend here works incredibly well.

This is light bodied, clean, and super drinkability, with a manageable sourness.

This is a really unique and tasty beer, and I wouldn't expect anything less from this brewery.
