Evermore is our rustic pale wheat ale brewed using a traditional step mash with locally grown wheat malt from Thall Family Malt. Pale yellow in color, it is late hopped with German Tettnang to impart a beautiful citrus like character. Evermore sits in our copper coolship for on hour and is then transferred over our baudelot cooler. A warm open fermentation creates aromas reminiscent of pear orchards and sprawling wheat fields.

16oz can. Poured out a slightly, hazy golden orange color with a huge, white head of fluffy, bubbly foam. It left sticky patches of lace on the glass. It smelled of clove, wheat, toasted bead and some citrus. Nice clove, lemon, wheat, yeast and caramel tastes.

This one pours a slightly hazy golden yellow color, with a big fluffy head, and lots of lacing.
This smells very strongly of clove, with some heavy grassiness, some banana, and some citrus.
This is definitely intriguing, but I think it trends towards a bit too dry with the clove and sharp grassy character here. That bone dry finish kind of leans towards almost astringent - I wanted a bit more softness, like some of the better wheat beers I've had in my time.
This is lighter bodied, crisp, but very dry, which affects the drinkability.
I wanted to like this one a bit more, but it felt off to my palate, personally.

T: The taste follows the smell and has flavors of pears and wheat.
M: It feels medium-bodied, smooth and a bit clean on the palate with a moderate amount of carbonation.
O: This is an interesting pale wheat ale and in some aspects has the type of mouthfeel that you would normally expect from a lager.

super rustic wheat beer here, sort of a wheat pale with just a little of the open fermented funkiness that their recently canned lager series presents as well, nothing bretty or wild about it, but it has fermentation characteristics beyond just the normal american wheat beer, subtle as they are, and thats what makes this interesting and fun. really eye popping can, pretty beer in the glass too, soft pale yellow colored with a lot of head on it, rising over the rim of my mug and not settling back at all, great carbonation feeding it, this seems can conditioned right away, and with just a little haziness about it. the nose and flavor show some minerals in the water it was brewed with and a little bready yeastiness like their lagers have had, its honestly got more similarities than anticipated being done with an ale yeast, and the wheat is so earthy, almost raw to me, simple from an ingredient standpoint but relatively complex to drink, and it seems right on for late summer early fall, harvest time, this is lighter than most marzen oktoberfest types, but still seems like a maltier fall drinker with sort of a german vibe to it. i love the ferment on it, i like how dry this is, and i like how the wheat is the start of the show without being in any way flashy. this is the kind of uniqueness and quality i have come to expect from these guys, the mouthfeel is spot on, and i am thankful to have them in the market here in idaho, this is really good.

Pours a crystal-clear, deep honey-gold body topped with multiple fingers of fluffy, soapy, eggshell-white foam; excellent head retention leaves just shy of a finger of level cap, large, frothy collar, and a walling of chunky, webby lacing extending down the walls of the glass.
Aroma opens with a muddling of clove and wheat, sporting an excess of minerality overlaying subtle marigold petals over the middle as notes of summer squash and pear offer a subtly savory undertone while floral orange finishes with a muted, citric touch.
Taste brings yeasty clove against a wet wheat base amplified lightly with zesty undertones of orange and grapefruit peel; musty pear and flowery roots on the back end see tinges of citrus softened into the finish.
Mouthfeel offers a light body with a carbonation trending full and fluffy, eventually dispersing into a clean mid-palate, delicately crisp; thins to a spotty consistency on the back end, though still mostly dry, and with flaky consistency firming up the finish.
A medley of muddled flavor expanding from the foundational wheat base, half-engagements strike the profile in a totally noncommittal fashion, and while not necessarily off-putting or bad, not much comes together here either, to the point of just being generic and messy.
