500 mL bottle picked up at the brewery last month; served at cellar temperature.
Pours pitch black, topped with two fingers of puffy, foamy, tan-coloured head. Retention is very good; it's still standing at the 10 minute mark, though it takes on more of a dense, creamy-looking texture by that point. Gobs of foam adhere to the glass, which is otherwise completely caked with a fine layer of lacing. She's a beaut; there's no denying that. On the nose, robust woody oak and red grape tannins steal much of the limelight, giving the aroma a strongly vinous quality. This is underlain by notes of molasses, raisin, prune and woodsmoke. Interesting, to say the least.
Taste is very smooth; the dark malts of the base stout nicely complement the WBA-induced features. Flavours of molasses, smoke and raisin come to mind, with subtle notes of roasted malt and cocoa powder helping to buoy up these aspects of the base stout. But the onslaught of wine barrel character that follows is what I really notice. Oak wood, along with suggestions of red wine and vanilla, help to give the latter half of a the profile a big, vinous, tannic kick that lasts through to the finish. Ashy, herbal aftertaste with ample tannins to dry out the tongue. The alcohol is noticeable, but well-integrated - I would not describe this as overtly boozy; just chest-warming. Fairly full in body, with a silky-smooth, soft mouthfeel and very little carbonation. Rich in texture and flavour; this is a decadent beer.
Final Grade: 3.93, a worthy B+. I'll wrap this up in a briefer manner than I normally do - Innocente's Until Proven Guilty Red Wine BA variant is pretty damn good. Not as good as the BBA variant, mind you, but still quite satisfying. I'd recommend trying this one, especially if the idea of a red wine barrel-aged imperial stout is at all attractive to you.

T - A huge smoke presence dominates, as the nose suggested, and almost completely drown out the barrel and the other components of the beer. Lighter roast notes are complimented by hints of oak and a vinous wine presence. As the beer warms the smoke presence lessens a little bit and some chocolate notes begin to come through but the smoke maintains its dominance.
M - Medium to full body. Light carbonation.
